Cauliflower-Cheese Casserole

1 cauliflower
3 tablespoons butter
1 red pepper, chopped
1 green pepper, chopped
1 clove garlic, chopped
2 tablespoons cornstarch
1-1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1 cup Monteray Jack cheese, shredded

Cook the cauliflower in a large saucepan for 10 minutes, drain.
Arrange in a 2-quart casserole dish.
In a large skillet melt the butter. Add the peppers and garlic.
In a small bowl mix the cornstarch and milk.
Pour into skillet. Stir constantly.
Pour mixture over the top of the cauliflower casserole.
Cover with Monteray Jack cheese.
Bake for 25 minutes at 350-degrees.
