Cheese Potato Crisp

~3 tbsp margrine or butter
~4-5 medium sized baking potatos
~1 1/2 cups shredded American cheese (I like cheddar)
~2 cups Rice Krispy cereal crushed slightly
Brush melted margarine over the bottom of a 15 1/2" x 10 1/2" baking dish.
Cut potatoes length-wise into slices about 1/4" thick.
Arrange slices in a single layer in pan, turning once to coat both sides with margarine.
Sprinkle potatoes with salt, then cheese.
Top with crushed cereal. Sprinkle with Paprika.
Bake at 375° for about 20 minutes or until potatoes are tender.
This is an easy recipe to play around with. Try different cheeses, different seasonings like garlic, Corn Flake crumbs or bread crumbs instead of Rice Krispy cereal.
