Swabian Noodles
(German Egg Noodles)

2 1/4 cup all purpose flour
1 tsp salt
2 eggs
about 1/2 cup water
Stir flour and salt into a medium bowl.
Add eggs and mix well.
Add water gradually until dough is smooth, light and firm.
Let stand for ten minutes.
Push dough through the largest holes of a cheese grater, or a colander, directly into a large pot of boiling, salted, water.
(A firm dough can be pushed through a ricer)
After a few minutes the noodles will be done, drain them and refresh in cold water.
Serve with your favorite sauce.
