Potato Pancakes

6 - 8 potatoes, peeled and grated
1 cup onion, chopped
1 cup flour
4 eggs
1 - 2 tsp. dried oregano
1 - 2 tsp. dried basil
Salt and pepper
Olive oil


Rinse grated potatoes in water and drain.
Combine grated potato, onion, flour, eggs, oregano, basil, and salt and pepper and mix well.
Heat oil in a skillet and pour potato mixture in oil to create 6 - 8 separate pancakes.
Brown for about 5 minutes per side. Place on paper towels to drain.

The Skinny: Use your favorite egg substitute.
